Spike ended his post by saying that reducing the plugins to the above you won’t have any support for CVS, Synchronization, ANT or any other feature installed by default. It will bring the size of Eclipse down to around 14Mb!!!

And this worked for me too. I installed CFEclipse (the minimal version referred to above) and Portable Firefox, as well as some of my Web files. Worked like a champ.
Now to figure out how to get a CF server on there too!
OH, and a side note… it’s MUCH easier to get things working right to work with a clean install of Eclipse than to try to trim down your existing install.

don’t forget too - if you’re using XP it will default the device to use a ‘Quick Removal’ policy - you can speed things up if you change the policy (via the device properties > hardware) to ‘Performance’ - you would have to use the tool in the task bar to stop the device to allow safe removal.
I’ve gone one step further now and have a virtual PC installed on a USB hard disk - my entire development environment comes with me!
